3 Top Muffins Recipes

Gluten, Dairy and Nut Free - Paleo Friendly

When you need a quick snack or something for the kids lunch box, muffins are a great option. These days there are plenty of grain free, gluten, nut free options available on the internet.

Here are three of my favorite creations....

Egg Muffins:

Not much of a recipe here team! Just throw in your choice of vegetables, meat and egg.

I like to use:
½ cup grated carrot and/or kumara
2 eggs
Chopped bacon or ham
Salt and pepper
Grated cheese for topping 

Mix all ingredients together and pour into muffin cups.
Bake at 180 degrees C for 20 minutes.
Makes 6 small muffins.

Banana and Chocolate Cinnamon Muffins:

These bread like muffins are great for a preschool treat as they are nut free.

In a kitchen blender place:
2 large ripe bananas
1/2 cup coconut oil – I use blue coconut as it doesn’t have the coconut flavor
3 eggs
1 teaspoon cinnamon
Sprinkle of sea salt

Blend until light and fluffy, then add:
1/3 cup tapioca flour
1/3 cup of coconut flour
1 teaspoon of baking soda
¼ cup of chocolate chips, chopped dates or raisins

Combine well again and then pour into 12 muffin cups. The mixture is reasonably runny.
Bake for 30 minutes at 180 degrees C.

Savory Muffins:

A YUMMY breakfast treat!

Mix together dry ingredients: 
1 1/2 cups almond flour

1/4 teaspoon salt

1/4 teaspoon baking soda
1/2 cup grated cheese

1/4 teaspoon paprika

30 grams cut into pieces ham (optional)

In another bowl mix wet ingredients:
40 grams melted butter

80mls coconut milk (add to butter to cool)
2 Tablespoons basil pesto (optional)

1 teaspoon Dijon mustard

2 medium eggs

Combine the two and mixture well. Add more coconut cream if you think it's too dry.
Bake at 180 degrees C, for 18-20 minutes. Serve warm.
