Courgette and Kumara Fritters

Something different to do with your seasonal courgette stash!

Having your own vegetable garden and growing seasonal veges is a great way to save money. In New Zealand, courgettes grow super well, so often we are left with a fridge filled with them! These courgette and kumara fritters are a great way to use the courgettes and get extra vegetables into your diet.




Courgette fritters

Ingredients:
2 cups grated and squeezed courgette
2 cups grated red or kumara 
2 eggs
1/4 cup almond flour or meal
Seasoning, eg salt and pepper. I used Billies Seasoned Garlic
Coconut Oil for frying

Method:
Combine all ingredients in a bowl and mix well. Fry on a medium heat until both sides are golden brown.
