Healthy Chocolate Nut Cookies

These cookies are wonderfully dense and full of nutrition. With loads of healthy fats, they will keep you full and satisfied.

This recipe is gluten free, dairy free and Paleo friendly.

This recipe is based on my Primal ANZAC biscuit recipe. They use a lot of almond flour, so given the cost of this, they are for special occasions.


  • 50 grams of Butter or Coconut Oil (I used Blue Coconut Cooking Oil for these)

  • 2 Tablespoons Honey

  • ½ teaspoon baking soda

  • 1 Tablespoon Water

  • 1 cup Almond flour

  • ⅓ cup Pumpkin seeds

  • ⅓ cup Sunflower seeds

  • 1 ½  cups Desiccated or Threaded Coconut (I used Pams Threaded Coconut)

  • 1 teaspoon Cinnamon

  • Pinch Sea Salt

  • 1 Free range eggs

  • ⅓ - ½ cup of small chocolate chunks (I used 70% Whittakers because it’s dairy free)


Preheat your oven on fan bake, 150 degree C.

  1. Melt butter or coconut oil and honey in a large saucepan on the stove top.

  2. Once melted, add baking soda and water and stir quickly with a wooden spoon.

  3. Add the rest of the ingredients, except the egg and chocolate, and mix together well.

  4. Add the egg and mix well.

  5. Add the chocolate chunks and stir to combine only.

  6. Roll into 12 balls and press down into cookie shapes on a non stick tray. You will probably need to wet your hand in between balls to reduce the stickiness of the mix.

  7. Bake for 15 minutes.

  8. Remove from Oven and leave on tray to cool, before removing and enjoying with a cuppa!
