Perfect Peppermint Slice
This recipe is made with Coconut Oil and therefore has loads of fantastic health benefits, plus has no refined sugar in it. It will melt if left out of the fridge though so make sure you eat it up quick - but I'm sire that won't be a problem!
1 cup Blue Coconut Oil - I used have flavourless coconut cooking oil and half wild coconut oil.
1/2 cup Carob powder
4 tablespoons Almond Butter (generous is best!)
1 heaped tablespoon of Honey
3/4 - 1 cup Desiccated Coconut
1 teaspoon Peppermint Essence
Put all ingredient in a microwave proof bowl and microwave on high for 1 min.
Stir and then put back in for another 30 secs.
Mix well then pour into a silicon baking 20cm square dish.
Place in the freezer for 45-60 minutes.
Remove, flip out and break up into pieces.
Store in freezer or fridge depending on how you like it. I like the fridge because then it is more soft slice like.
