Savoury Muffins

Free from gluten, dairy, refined sugars plus paleo friendly

I am dairy free and I miss a good tasty savoury muffin! Yumm cheese and bacon muffins.....

Here is my variation of a savoury muffin that has no dairy - of course, if cheese doesn't bother you then adding some cheese on top is a great idea.

Ingredients:

Dry:
1/2 cup of tapioca flour or starch

1 cup almond meal
1/4 cup and 3 Tablespoons coconut flour 
1/2 teaspoon smoked paprika
1/2 teaspoon sea salt
1/2 teaspoon garlic powder
1 teaspoon djion mustard
1 teaspoon baking powder
3/4 teaspoon baking soda

Wet:
3 eggs

1/2 cup of light flavoured olive oil (unless you don't mind the stronger flavour)
1/4 cup of water
1 cup (approx) of courgette, grated
2 pieces of bacon, chopped
6 sun dried tomatoes, chopped


Method:
Preheat your oven to 180 degrees C.

1) Mix all dry ingredients together
2) Add the remaining of the ingredients and combine well
3) Pour into 12 lined muffin tins, add grated cheese on top if you eat cheese!
4) Bake for 25 minutes
5) Remove and consume warm with or without butter!
